Lentil galette

Ingredients
- 1 cup red lentils
- 1 cup water (+ more for soaking lentils)
- 1 tbsp oil
- Salt
Instructions
- Soak the lentils overnight or for a few hours. If you don't have time, cook the lentils with little water until almost cooked but with a bite to them.
- Blend the lentils with enough water to achieve the same texture as pancake dough. Add the salt and oil, mix well.
- Place a pizza stone in the oven and preheat it at 210 °C.
- Lay a thin layer of lentil dough on some parchment paper (lightly oiled).
- Bake in the oven for 5 minutes or until the galette top seems dry. Delicately place the galette on a plate. Repeat for all the remaining dough.
