Bell pepper spread

  • 1 bell pepper sliced in 8 pieces
  • 1 large handful of fresh herbs (e.g. cilantro, parsley, etc.)
  • Olive oil
  • Salt
  • Lemon or vinegar


  1. Preheat oven to 200 °C.
  2. Slice the bell pepper into 8 pieces and arrange them on a baking pan ensuring not to overcrowd them. Drizzle with olive oil.
  3. Bake for 20 minutes or until tender and slightly charred. Let it cool down.
  4. Mix or finely cut roasted bell pepper with herbs.
  5. Add salt, lemon and pepper to taste.
