Bell pepper spread

Ingredients
- 1 bell pepper sliced in 8 pieces
- 1 large handful of fresh herbs (e.g. cilantro, parsley, etc.)
- Olive oil
- Salt
- Lemon or vinegar
Instructions
- Preheat oven to 200 °C.
- Slice the bell pepper into 8 pieces and arrange them on a baking pan ensuring not to overcrowd them. Drizzle with olive oil.
- Bake for 20 minutes or until tender and slightly charred. Let it cool down.
- Mix or finely cut roasted bell pepper with herbs.
- Add salt, lemon and pepper to taste.
