Roasted eggplants

The easiest (but still delicious) way to cook eggplants.

Ingredients

  • 2 eggplants
  • Olive oil
  • Salt
  • Herbs, spices, cheese, garlic, etc. optional

Instructions

  1. Cut each eggplant in half lengthwise (do not peel). Score the flesh with a knife in a criss-crossing pattern.
  2. Drizzle a bit of olive oil on each eggplant.
  3. Add salt, and any herbs or spice of your choice.
  4. Roast in the oven at 200 °C until soft (about 35 minutes).
