The easiest (but still delicious) way to cook eggplants.
Ingredients
- 2 eggplants
- Olive oil
- Salt
- Herbs, spices, cheese, garlic, etc. optional
Instructions
- Cut each eggplant in half lengthwise (do not peel). Score the flesh with a knife in a criss-crossing pattern.
- Drizzle a bit of olive oil on each eggplant.
- Add salt, and any herbs or spice of your choice.
- Roast in the oven at 200 °C until soft (about 35 minutes).
