Italian cacio e pepe

I love the one-pan hack of this super creamy cacio e pepe!
Ingredients
- Spaghetti
- Water
- Salt
- Pecorino (or parmesan)
- Black pepper, freshly ground
Instructions
- Grate the cheese and keep aside.
- Add the spaghetti in a pan and cover with boiling water. Mix constantly for about ten minutes, the pasta should still be slightly undercooked. The starchy water should have reduced almost completely.
- Grind some black pepper into the pan, mix everything. Add the grated cheese, keep on mixing for one minute until melted.
- Serve hot.
