Fried green beans with miso sauce

Ingredients

Marinade

  • 1 cm ginger, freshly grated
  • 1 tbsp honey
  • 1 tbsp yellow miso
  • 1 tbsp lemon juice (or Balsamic vinegar)

Beans

  • Large handful of green beans
  • 2 tbsp olive oil
  • 10 g sesame seeds
  • 1/2 tsp sugar
  • 1 pinch salt
  • Coriander leaves, roughly chopped optional

Instructions

  1. Place a large pan over medium heat and add the sesame seeds. Toast for about 3 minutes, mixing often, until golden brown. Transfer to a mortar and pestle. Add the sugar and a pinch of salt, and pound into a coarse crumb. Set aside.
  2. Place the same pan over high heat. When hot, add 1 tablespoon of oil and the beans. Fry for about 4 minutes, colouring the beans on all sides, turn off the heat. Add ½ teaspoon salt and toss to combine. Add the marinade, the coriander, and mix well.
  3. For the marinade, mix all ingredients to taste.
  4. To serve, pile the beans onto a plate and sprinkle over the sesame seed mix.
