Basic pie dough

Here is a no butter recipe

Ingredients

For one savory pie

  • 250 g flour
  • 40 g oil
  • 90 g water
  • 1 pinch salt

For one sweet pie

  • 200 g flour
  • 30 g almond powder
  • 50 g neutral oil
  • 20 g water
  • 20 g sugar
  • 1 pinch salt
  • 1 egg optional

Instructions

  1. In a bowl, combine all ingredients.
  2. Mix quickly until a smooth ball of dough forms. Be careful to mix for as short a time as possible so the dough doesn't become too tough and retains its crispness; pie dough should not be kneaded.
  3. If the dough is too sticky, add a little flour; if it is too dry, add a little oil and/or water.
  4. Lightly flour your work surface, roll out the dough, and place it in the tart pan.
  5. Add a layer of almond powder (if for a sweet pie) or mustard (if savory) to protect the dough from an overly wet filling.
  6. All that remains is to add your filling and bake (usually 35–45 minutes at 180°C).

Notes

  • For a crumblier pie, add more oil and less water.
