Here is a no butter recipe
Ingredients
For one savory pie
- 250 g flour
- 40 g oil
- 90 g water
- 1 pinch salt
For one sweet pie
- 200 g flour
- 30 g almond powder
- 50 g neutral oil
- 20 g water
- 20 g sugar
- 1 pinch salt
- 1 egg optional
Instructions
- In a bowl, combine all ingredients.
- Mix quickly until a smooth ball of dough forms. Be careful to mix for as short a time as possible so the dough doesn't become too tough and retains its crispness; pie dough should not be kneaded.
- If the dough is too sticky, add a little flour; if it is too dry, add a little oil and/or water.
- Lightly flour your work surface, roll out the dough, and place it in the tart pan.
- Add a layer of almond powder (if for a sweet pie) or mustard (if savory) to protect the dough from an overly wet filling.
- All that remains is to add your filling and bake (usually 35–45 minutes at 180°C).
Notes
- For a crumblier pie, add more oil and less water.
