Apple tarte tatin

My take on the classic tarte tatin

Ingredients

  • 5–6 apples (firm varieties are better)
  • 70 g sugar
  • 20 g butter or oil
  • 1 pie dough

Instructions

  1. Peel and cut the apples in thick slices.
  2. In a small pot, melt the butter (or use oil), and slowly add the sugar to make a golden caramel. If the caramel solidifies, add enough water to obtain a sirupy texture.
  3. In an oven-proofed pan, arrange the apple slices, and pour the caramel on top.
  4. Cover the apple slices with the pie dough, tucking the edges inside the pan.
  5. Preheat the oven to 180 °C, and bake for 45 minutes.
  6. Once baked, let rest for 5 minutes before turning over in a plate.
