My take on the classic tarte tatin
Ingredients
- 5–6 apples (firm varieties are better)
- 70 g sugar
- 20 g butter or oil
- 1 pie dough
Instructions
- Peel and cut the apples in thick slices.
- In a small pot, melt the butter (or use oil), and slowly add the sugar to make a golden caramel. If the caramel solidifies, add enough water to obtain a sirupy texture.
- In an oven-proofed pan, arrange the apple slices, and pour the caramel on top.
- Cover the apple slices with the pie dough, tucking the edges inside the pan.
- Preheat the oven to 180 °C, and bake for 45 minutes.
- Once baked, let rest for 5 minutes before turning over in a plate.
