Cacio e pepe

  • spaghetti
  • water
  • salt
  • pecorino (or parmesan cheese)
  • black pepper


  1. Grate the cheese and keep aside.
  2. Add the spaghetti in a pan and cover with boiling water. Mix constantly for about ten minutes, the pasta should still be slightly undercooked. The starchy water should have reduced almost completely.
  3. Grind some black pepper into the pan, mix everything. Add the grated cheese, keep on mixing for one minute until melted.
  4. Serve hot.
